Noma Kyoto 2024
Copenhagen-based noma, ranked as the best restaurant in the world numerous times and a landmark in fine dining that has significantly influenced culinary trends, opened a temporary 10-week residency restaurant in Kyoto during the autumn of 2024, following the first Noma Kyoto in 2023. The space, a remodeled existing restaurant, was decorated by OEO Studio, with tables, chairs, and cabinets created by Time & Style.
A warm ambience of mountains and forest was created in the existing space in time for the fall season. The space featured a pine wood framework, a ceiling covered with sake bags, a thatched art wall, a log wine cooler, Japanese paper dyed with persimmon tannin, and wall panels made of seaweed. Time & Style produced these cabinets. The furniture, made by Japanese artisans using Japanese materials, blended with the style of noma to create a space where one could feel a fusion of Japan and Scandinavia.
The Yoshino table collection captures the essence of both Japanese and Danish influences in appearance and tactile experience, drawing inspiration from Japan’s enduring woodworking traditions, particularly miyadaiku techniques that employ no nails. Crafted from exquisite Japanese cedar wood sourced from Yoshino in Nara Prefecture, each table features straight-grain cuts taken from trees that have been meticulously nurtured for over 150 years. The rich soil of Yoshino contributes to the wood’s renowned fine, straight grain, enhancing its natural beauty.
Crafted from zelkova hardwood sourced from Honshu, Japan, this chair features the distinctive grains and colors for which zelkova is renowned and therefore often used in temples and shrines. Additionally, the seat made of tatami introduces a unique innovation: while tatami matting is traditionally flat and square, here it takes on a soft, three-dimensional shape that enhances the chair’s overall comfort and aesthetic appeal.
